I was craving something with a little “Christmas” flavour but didn’t feel like baking a full loaf. I decided to whip up what I call a coffee mug cake and wow – it’s tasty. If you’re like me, and live alone or are feeling too lazy to bake – then this recipe is perfect.
Ingredients
- 1/3 cup of flour
- 1/3 cup of sugar
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of baking powder
- 1/3 cup of milk
- 1/2 teaspoon of vanilla extract
- 1/2 teaspoon of salt
- 1/2 teaspoon of cinnamon (the Christmas flavour)
- A few sprinkles lemon juice
- A handful of marshmallows
Preparation
In a bowl or large mug, mix in the dry ingredients. Slowly dribble milk over the dry mix and stir with a spoon until the mixture is nice and gooey. I used about 1/3 cup of milk. You don’t want it too runny – but not too thick. This is where adding milk slowly while stirring helps.
Add in the cinnamon, lemon juice and vanilla extract. Give it a good stir. Throw in the marshmallows. You can add in chocolate chips but honestly this was good on its own.
Cook in the microwave on high for about 45 seconds. My microwave is 1100 watts. Some units may take longer. But don’t overcook! This “cake” tastes amazing when just done right. Soft and gooey – but not too runny.
You can sprinkle some more cinnamon on top or a little bit of sugar to add some more flavour. This also works well with rice krispies.
Next time I’m trying this with some egg nog.
