Meal planning for healthy eating 2022: #1

It’s Monday afternoon and I just finished a protein filled breakfast. Surprisingly, eating healthy and cooking interesting meals has become a bit of a habit. I’m still using MyFitness Pal daily to track my calories and even to use it for meal planning. And other than ordering in pizza once this month, I’ve been pretty good.

Meal prepping is such a great way to plan for healthy eating throughout the week. When I got my groceries on Friday, I made sure to stock up on lots of fresh vegetables, some fruit, and cans of beans and legumes. I have some kale left that I need to use up too.

I try to fill my first meal of the day with protein. This past weekend was a bust as I haven’t been sleeping well at night time. I had a nap last night and so couldn’t fall asleep. Getting up at noon isn’t exactly great when you’re trying to eat three meals a day. So, what I eat for breakfast will fluctuate. I do intermittent fasting a couple of times a week – so today will be a fasting day.

Here are some ideas for you, if you want to get into healthy meal planning. I find prepping at the beginning of the week to be really useful. I’ve already gone through a dozen eggs where as before, I had to force myself to use up the eggs before they went bad.

I’ll list a few meal ideas for you so you can get an idea of what I eat. I’m eating mostly plant based foods these days, but I do love dairy, breads and meat too.

Breakfast

Oatmeal

There are many ways to eat oatmeal. My favorite is in a protein bar or for a snack. For breakfast, I will mix 1 cup of oats, some milk, applesauce and add a sliced banana to the bowl. Heat it up in the microwave for just 1 minute and you have a breakfast full of fiber and potassium.

Hardboiled Eggs

About once a week, I’ll hard boil about 6 eggs. I try and have at least 1 egg for a protein boost with breakfast and then another one with lunch or dinner. Hardboiled eggs are easy to make, easy to store, and can keep in the fridge for a few days. Great for protein and snacking on the go.

Toast and peanut butter

If I’m really hungry when I wake up, sometimes I’ll have 1 to 2 pieces of whole wheat toast with some peanut butter or jam. This is a higher carb breakfast but it’s filling. I’ll pair it with a side of fruit like grapes or apple slices.

Special K Almond Cereal

I try not to eat too much cereal but sometimes when you aren’t feeling good, cereal is a good option to make sure you eat in the morning. I like Special K cereal and mix it with either a cup of yogurt or milk. I’ll usually eat a piece of fruit on the side like a banana or a handful of berries.

For drinks, I usually have one cup of instant coffee with cream. I switched to instant coffee because I felt like I was wasting so much when I made full pots of coffee. It’s just me – and I can’t drink that much caffeine in a day. So, my coffee is typically the first thing I make. I do add a teaspoon of sugar, and it’s usually the only sugar I add to my foods unless I’m baking or the recipe calls for it.

Lunch Ideas

For a few months last year, I ate spinach and tuna wraps almost religiously. But eventually, I did get tired of it. This month, I went back to eating things like kale and raw veggies. If I have bread for break, then I try not to eat it the rest of the day. So, lunches are typically low calorie meals filled with plant based foods and fruit. Sometimes I’ll have leftovers from the night before, like the kale bean soup that I made last week. I’ll get my protein from things like eggs, beans, tuna, hummus and leftover chicken from the night before. It really varies from day to day.

Keep in mind, that I’m a single person. If I make a standard recipe for a family of four, that will feed me for days. I’ve been eating my kale bean soup since last Thursday and still have a bit left.

  • Fried kale and scrambled eggs
  • Kale bean soup or salad
  • Brown rice and beans or chickpeas
  • Quinoa salad with vegetables and dried fruit
  • Homemade soup with 1 slice of toast
  • Lettuce wraps – with tuna, eggs or protein filling
  • Raw vegetables and hummus (celery, carrots, green beans, cucumber)

For drinks, I usually stick to sparkling water or tap water that has been chilled. I usually only have one cup of coffee per day which goes with my first meal of the day. It’s a nice way to “wake up” in the morning.

Dinner Ideas

For dinner, this is where I like to get creative. I will often use my new Crockpot and start prepping meals in the afternoon. I love a good slow cooked soup or stew – especially on cold or rainy days. There’s something invigorating about grabbing a cup of soup that you made from scratch. There’s a sense of pride and satisfaction from executing a recipe to perfection.

For dinner meals, I like to eat a balanced meal and try and incorporate the four main food groups – protein, produce, dairy and grains. This is where I get the bulk of my protein for the day. I do allow myself cheat meals, so maybe twice a month I’ll order in pizza or a burger. I think it’s important to allow yourself treats to avoid binge eating.

Also, life is short. So, why not indulge every now and then??

  • Chicken vegetable stew
  • Beef and bean chili
  • Hearty homemade soups
  • Hearty beef stew
  • Ham and broccoli casserole
  • Chicken pot pie or tarts
  • Butternut squash and chicken soup
  • Asparagus quiche

When I get stuck in a food rut, I often turn to Downshiftology for creative ideas. Lisa’s videos are amazing, and she focuses on clean eating for auto-immune disorders and to help reduce inflammation. Her kitchen is also my dream kitchen – I wish I could afford a Vitamix! A lot of my newer recipes were inspired by this channel.

That’s about it today for meal planning for the week. I have some kale I need to use up. I also got some frozen butternut squash that I’m excited to use in the crockpot. What I’m making – I don’t know yet. I also plan on doing some healthy baking this week if health allows for it. My sleep schedule is off due to the insomnia. I tell you – it’s something new every day living with hypermobility EDS.

I’ve shared with you some of my favorite go to channels for inspiration in the kitchen. This year, my goal is to incorporate more plant based foods and foods that will help reduce inflammation. I suffered from osteoarthritis as well and this is important for joint health.

Cozy morning rain and coffee thoughts with pictures!

It’s Tuesday morning and I woke up about half an hour ago feeling relaxed and refreshed. I’ve been working on turning my sleep schedule around and aiming for at least six hours of sleep every night, and to be up no later than 9 in the morning. With the exception of a couple of days, it seems to be working. The cooler weather and shorter days also help.

The forecast is predicting rain all week. I suppose that is good for the farmers. But it’s too good, too late. My flowers have pretty much died. They’re all brown and even plant food won’t help them bounce back. I have to get outside in the next couple of days and vacuum the area rug. The petals are dropping like crazy. It’s sad. While I love this time of year, I also have loved having beautiful flowers on my balcony.

But on the upside, chilly mornings like today make for great ambiance in photos and videos. I’ve got my warm cup of coffee, a glass of almond milk – and a new kind of breakfast. I’m eating a delicious protein bar that I made last night and an egg. In a serious effort to eat “mostly clean” – I’m trying new recipes and foods to keep things interesting. Fun fact. If you load up with protein in the morning or your first meal of the day, you’ll have more energy to get you through work, and you’ll feel full longer. It’s a great tip for weight loss.

Home Decorating Project

My home decorating project is a daily and continuous thing. The living room is coming along nicely. I’m thinking that I might pick up a bookshelf from Ikea for the corner by the balcony. This room is actually pretty huge. The only issue is that the outlet in that corner hasn’t worked since I moved in. The owner needs to send out an electrician but maybe he can take care of it himself next time he’s out this way. It’s not a big deal.

I’m thinking either a brown Billy bookcase can go into the corner. I’m also looking on Facebook and Kiiji for vintage furniture pieces that will match my mom’s coffee table and record cabinet. These pieces are older than I am. No one else in the family wanted them and I happily took them home. I’m not crazy about using the record cabinet for the tv. Eventually, I’d like an actual tv console. But they’re so expensive right now.

The chairs however with their new slipcovers look fantastic. Not bad for a $70 find on Amazon and free delivery to boot with Prime which has definitely come in handy. I ordered in once a month.

For the shelves, I found some older photographs I had taken and reframed them. That project cost me — $0.00. I just repurposed items I already had. The artwork on the walls are temporary. I’m looking on sites like Etsy for handmade stuff to hang. I’ve always wanted hanging wall art – so maybe. I’ll share my Amazon wish list with you so you can see what kind of things I’m looking for. I’ve come to not like the carpet color. It’s green-grey and hard to match with. So, I’m going for mostly neutral colors for furniture, with blue, greys and orange or coral accents.

The table by the window with the planters isn’t a table at all – heh. It’s the top of my computer desk that is falling apart. I bought it second hand from Facebook three years ago. I think I might just repaint the unit. I’m leaning towards a teal or antique green kind of color. I’m also searching Amazon for chalk paint for this project.

An area rug is still a possibility. An old school friend suggested I put a bookcase in the corner and make a reading nook. It’s a great idea. I can also use the bookshelves to display artwork, and other collectables I have from my dad’s house.


For now, I’m working on Spotify playlists by mood and they are growing fast with promotions. I love it! I think it’s really helped to spark those creative juices again.

Right now, I’m currently listening to Acoustic Guitar. It’s great for early mornings when you’re drinking your coffee and thinking about what to do for the day.



Daily positive thoughts

Well, I think that’s it for this morning. Don’t feel that you have to read every post I put out. I know I write a lot. I know engagement can be low at times. I’m working on making posts look really good by adding more photos and artwork. I’m also trying to write inspirational quotes and share things that I think can help those who need it. I’m also back to cooking and baking almost daily – and will be sharing lots of recipes with you.

I think tonight it’s going to be a roasted chicken kind of night with bell peppers. But we’ll see how the day goes.

I’m in a nesting phase of my life

Last night after I made that delicious casserole, I was still hungry. I’m not sure why as I ate really healthy yesterday and filled up with delicious foods. Maybe it was hormones or just boredom. Anyway, I decided to make a single serving of mug cake. It’s an easy recipe with just four ingredients. You mix it all up in a mug, and cook it in the microwave.

I got everything ready. The main ingredients are flour, sugar, baking soda and milk. I poured everything into my little bowl which is just easier for mixing. Went to pop it in the microwave when I felt my spoon hit something hard. I thought maybe some of the flour had gone bad. Or something fell into the bowl. Oh, how wrong I was.

It was a freaking BONE! A bone was in my bowl.

It was a small bone but had ridges which made me think it may have been a spine or neck bone. From what animal? I had no idea. But I had all these visions of rats and mice crawling into my food and I panicked.

I tossed out ALL of my baking ingredients. The flour, which had been newly ordered from Walmart. The milk which I had just drank that morning with my breakfast. I thought it tasted funny. And the baking soda. I had no idea where the bone came from.

I’m not worried about a rodent being in my home as there are no droppings or signs anywhere. I had cleaned out the flour bin before even dumping the flour into it. And the baking soda I knew was clean – but I was just so grossed out. I’m so mad still. I tried to forget that I found the bone but I couldn’t. Everything went into the garbage.

I just hopped onto Instant Cart because I had great plans to bake this week. The weather is supposed to be cool all week – lots of rain – so I thought it would be a good project to do around the condo. But my god. I was seriously grossed out and freaked out. Such a waste of baking products.

I took my complaint to Walmart on Twitter but they haven’t responded. No pictures, I just tossed everything straight into the garbage. I’m so glad I found the bone before actually eating it. Could you imagine? Ugh. I’m traumatized.


No Frills is now delivering

I got an order ready last night for the City Market in my area and hit the “order” button just now so I could restock my baking ingredients. And of course, City Market does not deliver in my area.

I’m annoyed as I had just received my biweekly grocery order yesterday from Walmart. After that, I decided nope. Hell, no. I’m not ordering in food from Walmart for a very long time. I know the problem likely came from either Rogers or Dairyland – where the products were made. But what if?? I don’t want to think about it.

Anyway.

I use Instant Cart for all my shopping needs these days. I was surprised to see that No Frills and Superstore have been added in my area. I can’t use PC Express which is usually my preferred service. So, I just ordered $70 worth of baking ingredients to replace what I tossed out. I’m so mad still. What a waste of food.

I’m wondering what could have possibly happened here. I know that there is a certain amount of bugs and fecal matter that slips into our food in the factories. But most of the time we don’t notice this. I mean, this was an all out BONE from some kind of small animal.

Ugh.

The good news is No Frills is decently priced for baking items. The price of meat however is crazy. I added some chicken thighs and shake and bake as I want to cook up some chicken this week. I’m also going to share my meal plan for the next two weeks for you. I’m still working on the post.


I’m in a nesting phase

I’m not sure if it’s because it’s fall, or the weather is chillier, or that Thanksgiving is coming fast, but I’m in a total nesting phase. I’ve been home for so long now that I am comfortable being at home. The thought of going out and being social is exhausting to me. I have to go to a family event next weekend and I’m dreading it already.

I have some medical testing coming up in the next couple of weeks. I need to get some xrays done and labwork. Fun times.

Now that my living room has been finished and is looking great – I’m focusing on DIY home projects. I’m going to hold off on decorating my bedroom until Christmas time. I have been shopping around for a vintage tv cabinet to match my furniture but I’m not finding anything I like. Online shopping is a fun thing to do while binge watching funny shows like Parks and Rec. I also started watching Gilmore Girls again last night.

The room is coming together. I need to find some affordable and budget friendly canvas art – and a few accents. I’m thinking maybe an area rug too. But we’ll see. I’m also in love with my new couch. And the slipcovers for the chairs look pretty good too.


Kitchen organization

I spent a long time decluttering and organizing my kitchen cabinets yesterday. I’ve ordered too much for a single person. My goal is to waste less food and use up any ingredients that are close to expiration date. So, I ordered in a few cheap Sterlite organizers and my cabinets are starting to look really good. I’m shopping around for good mason jars so that I can store some of my baking items like oats and cereal properly.

I was tired of not being able to find anything when I needed it. I need to get a smaller tray as this one was too long for the shelf. But at least now I can easily grab stuff without having everything fall over. The shelf above this is full of oats, vinegar, oils. This is a work in progress.

A couple of years ago, out of sheer frustration, I bought a stand up pantry shelf from Facebook. It was a second hand Ikea pantry and that’s where I store most of my dried goods like pasta, rice, etc. The great thing about my kitchen is the amount of storage I have. I just have to find a system that works.

My next step is to organize and find a home for all my art supplies. Everything is just sitting on top of my kitchen table. If I want to have company over for dinner, that’s not going to work. I’ll need to get on that this week. I also want to reorganize my storage room and music room. That’s going to happen by decluttering. It’s a good winter project I think. Maybe take a while.


Healthy meal planning

I’ve spent a lot of time on YouTube and TikTok sifting through recipe ideas for fall. There are a lot of recipes I want to try. Here are some ideas I’ve come up with for the next couple of weeks based on what I have in my pantry.

  • Roasted chicken thighs, with a side of mashed sweet potatoes
  • Mini tarts filled with chicken or beef filling like my mom used to make
  • Zucchini muffins or loaf
  • Butternut squash and apple crumble – yummy!
  • Something with bell peppers – I accidentally ordered these
  • Spinach wraps – for daily lunches, maybe a soup too

I have a problem where I ordered too much for myself. But — I’m down to ordering twice a month for groceries. Today’s order was only to replace the baking items I had to toss out. At least they will last a long time.

So, stay tuned. I’ll be sharing a lot of recipes over the next while. And I’ll be going through some older recipes and revamping them. I posted a casserole recipe earlier this morning. It was just OK. I still have some ham left I need to use up.


So, that’s life in a nutshell right now. Focusing on healthy eating, cooking, exercising, getting some fresh air. Stocking up my pantry and freezer with healthy meals to eat over the next couple of months.

I’ve also been feeling nostalgic for older home design shows. Remember the days of early TLC shows like Trading Spaces and Divine Design? I’m also missing Anna and Kristina’s Shopping bag which was a fun show. I learned a lot about cooking and shopping habits from that show.

Living with chronic migraines – but you don’t look sick!

It’s nearly 8:00 am and I’m showered, dressed, have a cup of coffee and a load of laundry in the washing machine. I wish this could be the case everyday. I love early mornings. But alas, another migraine kept in bed most of the day yesterday. It’s not even the migraines anymore. It’s the dizzy spells and nausea that come with it. It literally comes and goes. One moment I’m sick as a dog, the next, I’m ready to get my day going.

This is the part I have trouble explaining to doctors. I did some research and migraines have now been declared to be as debilitating if not more so, than strokes or heart attacks. That gives me a bit of relief to know that I’m not alone in the struggle. I see my doctor next week for a follow up. I’m hoping we can go back to the drawing board on what medications to try. The mirtazapine does nothing for me. I gave that up a couple of weeks ago. It just made me sleep 18 hours a day. And who can be productive on that schedule? I also read one side effect is weight gain. Which is the opposite of what I want.

I think I’d like to try the amitriptyline again. It’s one of those drugs you can take as needed and you don’t need to constantly increase the dosage. The Zomig has stopped working. I can’t stomach the Cambia powder. And before you even suggest it…

Nope. I’m not going to be talked into Botox injections. For one, even with 80% coverage of benefits, it would cost $200 every twelve weeks. And that’s money I just don’t have right now. Or like ever in my current line of employment. My rent went up. So did the power bill. And it seems, everything else like the cost of food is on the rise too. Does it ever really end?

One the reasons I’m still off work is that my former doctor had requested that I work from home on a permanent basis. WCB disagreed with this decision. I was put back on the employer’s benefit plan. But that will run out soon. If I don’t get on long term disability, I’ll have no choice but to return to work. The caveat?

My employer refuses to let their staff work from home on a permanent basis. Our Premier is pushing people to go back to work as soon as possible. There’s just no compassion really. People don’t care if you’re sick or living with a disability. They’ll cite performance issues to push you out.

So, I’m looking at all options to carry me through while I figure things out. In a simple world, if I could just find work I could do on my own schedule from home, that would be amazing. The hardest part in the world right now is keeping to some kind of regular schedule.

Last night for example, I wound up getting out of bed around 1 am and I’ve been up since. I lazed in bed most of yesterday. Sometimes a migraine can feel like a stroke. When you lift your head or open your eyes, you instantly feel sick or fall right back into bed. I think the vertigo might be the worst part of it.

Part of the problem with migraines is the whole “you don’t look sick” or “you’re not sick 60% of the time”. But what people don’t realize is that even you’re not in migraine state, the rest of the time, you’re in that fog or hangover state. Sometimes that part is even worse than the migraine itself.

My worst migraine in my life happened after a trip with my friend to Calgary to see a concert. I wound up in the hospital with what I thought were stroke like symptoms. Every time I lifted my head up, or opened my eyes, I got sick. I mean, I had to call 911. I could the look of the paramedics face when they said, “Oh, it’s just a migraine.”

I felt validated when I nearly puked on the guy’s shoe. They finally believed me when I said I “got sick every time I opened my eyes.”

Good days have been far and few in between. And even though it’s dark and dreary outside, I feel like I can get a lot accomplished today. I forgot how much I love early mornings. Watching the sun rise. The world is quiet. There’s very little traffic. It’s serene. We have lots of trees around which means lots of birds. Even the gulls don’t get up that early in the morning.

And so, this is where I am this Thursday morning. Thinking about the future. Trying to reach out to former colleagues, friends and network as much as I can on the good days. And asking you, my dear readers, to pass on the word that I’m looking for work in marketing that I could do from home.

Another milestone! 600 followers

I couldn’t believe how many notifications I received last night after my last two posts. I watched as my list of followers continued to grow and right now as I type this – the blog is sitting at 600 followers.

Now, compared to blogs with thousands of followers I know that doesn’t seem like much. This blog has been a work of passion since April 2019 when I started it just to vent and whine about daily life issues.

Then as my audience grew, so did I as a writer. I challenged myself to research different subjects and eventually, my article list grew enough to break my blog down into sections.

I’m proud to show off the new layout and pages where I’ve organized and renamed most blog posts.

Living Well is a series that I’ve been working on for the last year. Instead of whining about my various ailments, I decided to use this platform to share my experiences and what I have learned about chronic pain management. You can now read articles on the following subjects if you click on menu, and head on over to the Living Well section.

  • Chronic migraine and headache care
  • Hypermobility and joint pain care
  • Self-care for mental health
  • Women’s health issues such as PCOS

I write from my own experiences and I share tips of what I’ve learned from doctors, specialists, and other people who have similar medical conditions.

I’ve met so many wonderful people through this blog and I thank each and everyone of you for the ongoing support and encouragement to keep this blog going.

I’m also still working on my fitness challenge of losing weight – instead of daily updates, I’ve switched to monthly progress reports. I’ll share tips and healthy recipe ideas along the way.

And as I get back into art and music, I’ll share my creations from time to time with you. Isolation has been hard on all of us. So, I’m using this platform as a way to share tips and advice on how to stay healthy – physically and emotionally during these troubled times. Sharing my own personal experiences with you, has been a joy.

Living Well: The importance of a good night’s sleep

Regulating sleep schedules without the use of medicine or supplements

Sleep plays a vital role in our overall health. Not only is sleep crucial for daily life, but it is also an important part of weight loss and fitness. In continuation of my fitness challenge theme; and this week’s goal to improve my sleep habits, I’ve decided to share some of my favorite tips that help you “rest well.”

As mentioned previously, I am a chronic insomniac. The worst experience was back in 2014 when I was ill. Two months went by and I was surviving on very little sleep. I had been off work for several months and doctors could not figure out what was causing it. I remember one day I was so tired that I felt asleep on the toilet. I was burnt out.

That’s how important sleep is. You can’t function without it.

My longest stretch was about 120 hours without sleep. So, I visited a sleep clinic as suggested by my physician. I learned some valuable information and feel compelled to share it with you.

By the end of the 120 hour stretch, I was completely delusional. I couldn’t form proper sentences. I was seeing and hearing things that weren’t there. I was paranoid and thought the world was out to get me. My career and personal relationships suffered because of it. It led to really bad decision making – decisions that I can’t take back.


Why sleep is so important

According to my research from multiple sources, eight hours of sleep seems to be what the majority of health professionals agree on. If you’re trying to lose weight, getting enough sleep is crucial. Having a regular sleep schedule helps our bodies in many ways to heal and lose weight.

From a recent article by the National Heart, Lung and Blood Institute:

Sleep plays a vital role in keeping your brain healthy.

“During sleep, your body is working to support healthy brain function and maintain your physical health. In children and teens, sleep also helps support growth and development.”

Sleep helps us to stay mentally fit and perform day to day tasks. Not getting enough sleep will impact your ability to drive a car, work on heavy machinery or even basic life skills like cooking, reading or writing. Even thinking can seem impossible with a foggy brain.

Sleep deprivation can lead to serious health problems and can have a real impact on your personal life, your job and your relationships. Your energy levels will bottom-out and you  may even lose interest in doing things you once loved. This is why fitness and exercise really helps to regulate your sleep schedule.


Some tips to help regulate your sleep schedule

For me, there are a few things that help me regulate my sleep schedule so I can get at least six to seven hours of non-interrupted sleep.

  1. Set a regular sleep schedule – in bed by midnight every night
  2. No naps during the week
  3. Daily exercise – but not past nine pm at night
  4. Plenty of sunshine and fresh air
  5. Drink lots of water during the day. No coffee past four pm

Clean your room and bedding often

Nothing beats clean sheets and a fluffy pillow – I sleep best when the bed-sheets are fresh out of the dryer. Keeping your bed clean and free of clutter will help you to relax and be comfortable when you lie down. I need to work on cleaning my room as well. If the room is cluttered or messy, I find at times I can’t relax enough to sleep. Invest in a large hamper for your dirty clothes and look into tools for organizing your closet like shelf hangers or racks.

Without spending a lot of money, you can “feng shui” your bedroom to help you sleep better. Get some blackout curtains, use a humidifier for dry homes, get some scented candles, diffusers – or use calming colors like pastel green, blue, yellows to calm your busy mind.

No screen time – at least one hour before bed

This means no phone, computer or electronic devices at least one hour before bedtime. It’s time to shut off your electronic devices and trade your I-pad in for a paper book. The glare of the screens can be hard on the eyes at night time. Give your eyes and your brain at least an hour to relax before bed. This is why I find being in bed early is crucial. I need to make sure I get at least six to seven hours of sleep to feel refreshed and alert in the morning.

Have a cup of sleepy time tea

One or two cups of chamomile tea with a dash of milk and honey really helps to calm the nerves and puts me in the right frame of mind for sleep. Chamomile is a natural herb that helps you sleep. It is caffeine free which is what you want to drink at night time. I’m a coffee drinker. Not a tea drinker. But the sweet taste of chamomile is a guilty pleasure.

This is something I really need to get back into. It’s June 2020 and I can’t remember the last cup of tea I had!

Listen to white noise or nature sounds

While some people like me listen to music to fall asleep; I find listening to white noise or nature sounds can really put me to sleep fast. The low hum of  a fan in winter months or humidifier often does the trick for people. Sometimes I listen to nature music.


Hypnosis or “Talk Down” Videos 

The Honest Guys on YouTube have some great videos that can help you fall asleep to. I really like the twenty minute talk-down sleep videos. If you’re looking for more music suggestions, check out my post on music for relaxation.


Deep breathing exercises or “bedtime” yoga

Deep breathing while lying down at night time is a great way to prepare the mind and body for sleep. Yoga and meditation before bed can help with calming anxiety. Here’s a video on how to combine deep breathing and yoga for sleep.

There are many other things I’ve learned over the years to help with my sleep problems. Insomnia can really drag you down mentally and physically. But don’t let sleep ruin your life.

If I can change my life long sleep disorders – there’s hope for you too.

Regular exercise, getting plenty of sunshine (vitamin D), and fresh air really is an amazing way to help regulate your sleep schedule. I can count the number of nights I’ve had interrupted sleep on one hand. On those nights, I either went on a long nature hike, or spent a lot of time outdoors – or I took a fitness class like Aqua Fit.

Asparagus Quiche – without the crust

The other night I made dinner for a friend and I made the most delicious asparagus quiche. I just polished off another serving for lunch and it tasted even better today. I’ve made plenty of crustless quiches before but never with asparagus. I forgot how amazing asparagus can be.

This is a pretty easy recipe to follow and is very versatile. I’m not so great with pastry but one day I will make my own pie shell.

I do suggest using a casserole dish. I only have square baking dishes – but this would fit better into a 9×12″ casserole dish.


Ingredients

  • 2 cups of cheese (cheddar, mozza or your favorite blend)
  • 2 tablespoons of butter or olive oil
  • 1 bunch of asparagus (about 10-12 long pieces) cut into 1″ slices
  • 1 cup of spring onions cut into small round pieces (diced)
  • 1/2 can of creamed soup (I used Campbell’s Cream of Broccoli)
  • 1/4 cup of half n half cream
  • Six eggs beaten
  • 1 teaspoon of minced garlic
  • Spices: salt, black pepper, parsley, sage

Preparation

  • Preheat the oven to 375 and grease a casserole dish. I use Pam spray for this
  • In a large skillet melt the butter. Add in the garlic, spring onions and asparagus. Season with spices to your liking. Cook for about 3-4 minutes. This is just so the asparagus can absorb some of the flavour. Remove from heat and set aside.
  • In a large bowl whisk together the eggs, cream and soup. Don’t mix it too much. You can add a little bit of corn starch to thicken up the base if needed.
  • Add in the asparagus mixture and cheese. Give it a little stir.
  • Top up with more seasoning – I always add a little parsley on top as a garnish.
  • Cook for about 40-45 minutes. Cooking times will vary so check often. I used the toothpick method.

This recipe will up to four people. I do suggest serving it with something on the side – like cooked ham, steamed asparagus, or garlic shrimp which is what I did. Scones or a cheese loaf would pair nicely with the quiche.

Optional: about 30 minutes into cooking, take the quiche out of the oven and add some more shredded cheese on top. You can broil the cheese to give it a crispier texture. I skipped this step – and it was still delicious.

Living Well: Skin care and treatments for adult acne

For those of you who have followed my blog for a while, you know that I live with Polycystic Ovary Syndrome which is a disease that affects hormones. What also happens with PCOS, is living as an adult in my forties with acne. Sometimes I look like an overgrown teenager with skin problems.

And I hate it.

As a teenager, I never had skin issues. It wasn’t until later in life when I started experiencing hormonal issues, that I really started experiencing adult acne. When you’re a professional trying to work in a professional office setting – people often stared at me when I had bad breakouts. I often wonder if it was a reason why I didn’t move as far as I wanted to in my career at the time.


Over the years, my doctor and I have tried all kinds of creams and medications. I even saw a few dermatologists. One thought I had a good case of Rosacea. While another doctor, didn’t think it was Rosacea, but thought it was something wrong with my blood vessels. Which kind of made sense, since I also have Factor V Leiden.

Yes, I’m a complex patient – even though my doctor doesn’t think so. That’s just because she’s treated me for so long.

Because we also have winter eight months of the year, our air can get so dry in winter months that it really wrecks havoc on our skin.

As you can imagine, the cost of skin products can add up over time. I’m always looking for natural products to use and have found some success with Aloe Vera based creams and a good face wash. That said, when breakouts are bad, I have to take Minocycline which is an antibiotic for fungal infections. It seems to get rid of the acne – and the great thing is, usually keeps the acne away for six months to a year.

So, today’s post is going to be dedicated to skin care and products I’ve found to be helpful for keeping my acne breakouts at bay.

Cera Ve

Face Wash – budget friendly

It was my family physician who recommend this brand to me and I have used it for a couple of years now. It feels great and refreshing on my skin too – especially after a long day.

I started using the face wash in the shower in the mornings and at night time as well about a month ago. I can already feel the difference in my skin.

I’ve also combined this treatment with Omega 3 – fish pills – and it’s a great combination for dry or acne prone skin.

You can pick this up at just about any pharmacy, or order from Amazon. Cera Ve also makes face creams and lotions.


Nivea Skin Cream

A soft and soothing hydrating lotion

My mum introduced me to Nivea creams when I was a child. She used it for things like rashes, dry skin or sunburns. As an adult, I started using Nivea Soft cream which felt less greasy on my skin.

I wear this product daily – apply once in the morning and before applying foundation, which is the only makeup I apply to my skin.

A 200 mL container usually lasts me about two months and you can buy it at any pharmacy or visit Amazon.


Aloe Vera Lotion

A natural product that comes in many forms to help hydrate your skin.

Aloe Vera is another great natural plant that is used for medicinal purposes. You can buy many aloe vera based products from oils, creams, gels and even in beverage form.

I switched to the Aloe Vera Nivea Soft cream for body lotion and it feels amazing on my skin. The first time I put the lotion on my legs, I breathed a sigh of relief. It felt like I had just stepped in the shower.

You can buy these bottles from any pharmacy – or on Amazon. One bottle will last me several months.

Tea Tree Oil

A natural remedy for dry and acne prone skin

Tea Tree Oil, in combination with Coconut Oil or Olive Oil, can make for a great product to help combat acne.

This Oil is also known as melaleuca oil, and is an essential oil that comes from steaming leaves of Australian tea trees. It is believed that the tea tree oil is antibacterial and can help fight fungal infections. It is often used to treat acne, athlete’s foot and other skin problems.

The oil should never be used on its own as it can burn skin. It is suggested to mix a few drops of the oil in with a base like coconut oil or olive oil.

If you already have oily skin, you may want to avoid this treatment. Tea tree oil should not be taken orally. There are a number of options to purchase. I recently tried this brand which you can get on Amazon.

A quiet humidifier to help keep your skin hydrated

I love this humidifier. I bought it in the fall when I was struggling badly with allergies. What I noticed after a few nights of use was how great my skin was starting to feel.

Even the bags under my eyes were starting to lighten up and I felt better overall.

A humidifier is an easy solution if you’re living in an extremely dry home or live in a dry climate province like Alberta.

It’s important to keep this machine clean as fungus and bacterias can get trapped inside the machine. I have this model and have not had any issues with it. It’s also very quiet.

I should take my own advice and clean this machine out and use it again.


Trial and Error

So, if you’re like me and you have acne prone skin, I hope that at least one of these products may help you. Winter is coming fast and I’m cringing already at the thought of how the weather affects my skin. I’ve stocked up on my daily vitamins and skin care products – and hope to beat the acne breakouts this year.

My doctor and I tried so many products over the years for my acne breakouts. I’ve finally found something that really works. And hope it continues working!

Sometimes the only thing that works for bad breakouts, is prescription medicine. I tried a gel during the summer that actually burned my skin. It did nothing for the acne spots. I turned to my pharmacist and she sent me a month supply of Minocycline, and my skin is back to normal – thankfully!

Also, I will add – that a healthy diet, regular exercise, natural vitamin D (sunshine) – and drinking plenty of water – will help improve your skin health.

Searching for the perfect blueberry scone recipe

Here we are at Monday morning again. The weekend flew by!

Yesterday was a quiet day. It was so cold outside and inside my condo. This morning – it’s PLUS SIX degrees. I refuse to turn my heat on based on principle.

My diet was terrible this weekend. I felt tired and didn’t have much energy yesterday as my insomnia has been bad. But I forced myself to go to bed last night at 11:30 and managed to get up before 9:00 am today. I need to do this for the next two weeks before going back to work.

I had planned on doing some baking yesterday to heat up the place. Having the oven on always helps. I didn’t make dinner until almost 8:00 pm which killed my fasting plan. But I heated up some frozen fish sticks, yam fries (mostly healthy) and boiled some veggies in the rice cooker. Now that part was delicious.

I have to use up all the veggies in my fridge in the next few days – so I’m guessing it will be another homemade soup kind of day. Or a vegetable casserole. I have a mix for scones that I want to get done today. So, I’m on youtube looking for great recipes.

I have TWO pounds of blueberries I need to use. I froze an entire container on the weekend. So, I might make some banana blueberry bread tonight too.

I love Jamie Oliver’s cooking tips. Here’s one for his scones recipe.


Anna Olson also has some great tutorial videos on her channel. She explains things so clearly – and talk about a dream kitchen. Although it’s probably a studio! When I move in the spring, the most important thing will be a gorgeous kitchen with plenty of storage.


I also like Chef Billy Parisi – he comes up with some pretty innovative dishes if you can look past his “hipster”? language – he’s also got a dream kitchen I’d love to get my hands in.


I was also thinking that I need to get a bigger freezer. I love batch cooking and freezing meals but my tiny freezer is packed already with ice for drinks and frozen vegetables. I can’t stock up like I really want to. So, I’m shopping for an affordable compact apartment size freezer that I can use for my weekly meals.

I’m hoping that I can work from home for the winter. It would be great to have meals that I can just pop into the microwave. If I have to return to the office, we’re not allowed to use the kitchen and that will really put a damper on my healthy eating plan. There’s only so many cold foods you can eat on a daily basis.

Anyways, that’s where my mind is today. It’s going to be a busy afternoon baking and hopefully helps to warm this place up! I’ll share some recipes later and some pictures if things turn out well.

I’m not ready for it to be winter yet!

Self-care goals: how to unwind after a bad day.

This is a repost. I think it’s good information to share every now and then. You can also read my post on The Art of Self-Care.

Just a short post today. It’s been a lousy few days. Tired. Stressed. And contemplating when things started heading south. Last month – things were amazing. But the past two weeks, since I got bronchitis, it seems like my whole world has come crashing down. And I’m not sure how to pull myself out of this funk.

So, I thought I’d share some tips on how I survive bad days like today – when it seems like the entire world is crashing around you all at once. Ever feel like you’re drowning and you can’t get out of the water? Yeah, that’s where we are today. I’ve sunken to a new low.

But then I’ll wake up tomorrow and it will be a new day. I’ll feel rested. And it will be a new day.

How do I cope on days like this? The routine isn’t all that complicated really. It’s pretty easy. Even you can do this.

Adult, Bath, Bathtub, Blur, Indoors, Leisure

Coping tips for really, really, bad days.

Make a nice hot cooked meal like my mum used to make.

It reminds me of her. There’s just something about the taste of a roast beef soaked in gravy, a side of roasted vegetables and mashed potatoes. Really. Nothing makes me feel like “home” more than this.

Watch animals and babies do funny things on YouTube

Watch dogs and cats doing silly things. Find funny videos of babies laughing. Laughing really is the best medicine. Also, watching people falling – video compilations. I shouldn’t love these as much as I do. But they really perk you up. Or maybe I’m just sadistic that way.

Reach out to a friend in need

Call a friend and chat with someone who is also going through a difficult time. Misery loves company. But sometimes you just need to vent to someone who understands. I did this when I got home. Had a good chat with a colleague and I feel a little better now. I’m not the only one going through a rough patch. We’ve all been there.

Find comfort – hot bath, soak in a hot tub or steam room

Having a warm bath with epsom salts really does work wonders on stress. Dim the lights. Bring out the candles. Lower yourself into the tub. Lean back with a water pillow. Put a facecloth over your eyes. And just relax. Block the rest of the world out. You deserve this.

Pour yourself a hot up herbal tea or a warm cup of cocoa

Polish the night off with a hot cup of Chamomile or Lemon tea. Chamomile is a herb that helps you wind down. It can also help you sleep. Fun fact – you can also use cool Chamomile tea for for a skin rinse. Not a tea drinker? No problem. A warm cup of cocoa can help. Add a dash of cinnamon or nutmeg to top it off. A few marshmallow if you’re not on a diet – to sweeten the deal.

Shut the world out -with music

Sit back in your reclining or rocker chair. Your couch or bed will suffice. Grab your noise canceling headphones. Turn on your favorite movie. Close your eyes. Let the soothing sounds of an acoustic guitar or dreamy instrumentals take you to another world.
